Dr. Rachel Kopec received her PhD in Human Nutrition from The Ohio State University. Her thesis work focused on the deposition, metabolism, and bioactivity of carotenoids and she continued this investigation during her postdoctorate at INRA (Institut National de la Recherché Agronomique). She is currently an assistant professor of human nutrition in the Department of Human Sciences at The Ohio State University and has served as an Associate Editor of the JACN since January 2018. In January 2020, she took on the role of Editor-in-Chief, bringing a deep understanding of the journal and its editorial processes as well as a wealth of knowledge in the realm of personalized nutrition science.
